What fermentation is

Fermentation is a controlled process where microorganisms convert sugars into acids, gases, and other compounds. People have used it for millennia to transform food — changing flavor, texture, and nutritional profile in the process.

Why we ferment coconut water

Fermenting coconut water transforms it: it develops acidity and effervescence, and the process yields prebiotics and postbiotics. We then pasteurize for shelf stability. The result is a sparkling beverage built for describable function, not just refreshment.

Prebiotics vs. postbiotics vs. live cultures

Prebiotics

Fibers that feed beneficial gut bacteria. Kallucha adds prebiotic fiber directly.

Postbiotics

Beneficial byproducts produced during fermentation and retained after pasteurization.

Live cultures

Live microorganisms in a product. Kallucha is pasteurized and does not contain live or active cultures.

How Kallucha differs
